Rasmalai is yet another one of my favorite sweets. This Bengali specialty is made with rasgulla (sweetened balls of paneer) soaked in sweetened, thickened milk that has been scented with cardamom and saffron. The result is a creamy, dreamy dessert that absolutely melts in your mouth.
Rasmalai is a popular Indian dessert originated from Bengal region. Ras means juice and malai means cream. This lovely sweet dish is prepared using soft fresh cheese called chhena. Soft & spongy rasmalai is loved all over India and is fairly easy to make too. So lets learn how to make Rasmalai today.
Tasty and yummy. Ras malai consists of flattened balls of chhena soaked in malai (clotted cream) flavoured with cardamom. Milk is boiled and a bit of vinegar or lime juice is added to split it. The whey is discarded and the milk solids are drained, cooled and kneaded into a dough. The dough is divided into small balls and the balls are cooked in hot water with a bit of rose water added. The balls are then cooked in milk with saffron, pistachios and kheer as stuffing.
