Ros Omelette is one of the popular street foods in Goa. Usually sold on gaadas (Local stalls) which serve chicken or mutton gravy served with omelette, onion, lime and Pao (Goan local bread). Go beyond the fish-curry-rice staple and try the street food dish that offers a taste of home for many. It’s a simple dish: a pungent, coconut-laden gravy or ros covering a fluffy omelette, with a sprinkling of chopped onion and some coriander, and a pao by the side.
As with any street food, there’s variety in terms of the offerings: mutton, chicken or potato ros. Some people serve small bits of meat with the ros, the spice levels vary, and there’s different bread on offer, some of it toasted. Everyone has a favourite ros omelette gaddo or stall— it could be one they grew up eating from, one that serves extra pieces of chicken or mutton, one that uses two eggs to make the omelette or just does a sunny side up, one that sandwiches everything between bread, and so on.
