Rasamalai consists of flattened balls of chhena soaked in malai (a type of clotted cream) and is flavoured with cardamom. Milk is boiled and a bit of vinegar or lime juice is added to split it.
Sweet dumplings made from cottage cheese, soaked in sweetened and thickened milk, delicately flavoured by the Queen of spices-Saffron, chilled and dunked in a serving bowl and topped with fragile pistachio flakes.
